Warning: this granola is addictive, it’s that good! It’s sweet, crunchy, and salty.  My husband doesn’t eat paleo, and he can’t stop eating it!

I don’t know about you, but I get tired of eggs for breakfast. I have a few brands of paleo granola that are really good. The problem is, they are expensive for the amount of granola you get in that little bag. So, I thought, it can’t be that difficult to make your own paleo granola, and guess what? It’s super easy!

It’s great by itself for a snack, but I also love to eat it for breakfast with unsweetened almond milk and fresh fruit. Let me know your favorite way to eat granola.

NOTE: All of the nuts and seeds should be unsalted.

Ingredients
  • 1 16 0z bag raw almonds
  • 1 cup chopped raw pecans
  • 1 cup unsweetened shredded coconut
  • 1/4 cup raw pepitas (pumpkin seeds)
  • 1/4 cup raw sunflower seeds
  • 2 Tbsp flax seeds
  • 1/2 tsp salt
  • 1/4 cup coconut oil
  • 1/4 cup raw honey
Directions
  • Step 1 Preheat oven to 325 degrees.
  • Step 2 Line a large rimmed baking sheet with parchment paper ( I use a 16 x 12)
  • Step 3 Place the almonds in a food processor and pulse until the almonds are in small pieces, but NOT almond meal (about 12 good pulses.)Place the almonds in a large bowl.
  • Step 4 Put the coconut in the food processor and pulse until it’s in smaller pieces (about 5 pulses.) Add the coconut to the almonds in the bowl.
  • Step 5 Add the pecans, pepitas, sunflower seeds, flax seeds and salt to the bowl. Mix to combine.
  • Step 6 In a small bowl, combine honey and coconut oil. Microwave for 20 seconds to make it easier to mix. Stir well (they will not look very combined.)
  • Step 7 Pour the coconut oil and honey over the bowl of granola and stir until well combined.
  • Step 8 Pour the granola on the parchment lined baking sheet and place into the preheated 325 degree oven for 20 minutes, stirring once halfway.
  • Step 9 When the granola is done, remove it from the oven and let it cool. Don’t stir it.
  • Step 10 Once it is cooled, you may have to break it into pieces. Place it in an airtight container.
